Ingredients
2 large heads of Bibb or Boaston lettuce or 4 heads baby Bibb littuce
1/2 cup De-Light-Ful Ranch Dressing
For Dressing:
1/2 cup plain nonfat yogurt or 1/3 cup plain Greek-style nonfat yogurt
1/3 cup lowfat buttermilk
3 tablespoons mayonnaise
1 1/2 teaspoons fresh lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1 tablespoon finely chopped fresh chives
Salt to taste
Preparation
Remove and discard the outermost leaves of the lettuce. Trim the stem slightly to remove any tough or browned spots, but be sure to keep the head intact. Cut each head in half lengthwise so that each half is held together by a bit of stem. Place the lettuce halves on a serving plate and drizzle with the ranch dresssing. Serve immediately.
For the Dressing: If using regular yogurt, place it in a strainer lined with paper towel and set the strainer over a bowl. Let the yogurt drain and thicken for 20 minutes. In a medium bowl, whisk together the strained or Greek-style yogurt with the remaining ingredients.
