Ingredients
1 large beet (approximately 2 pounds)
Preparation
Position a rack in the lower third of the oven and preheat to 325 degrees.
Trim the stems, leaving an inch and leave the tail too.
Wash the beet(s) and wrap with heavy duty aluminum foil. (If baking more than one, wrap individually)
Bake for 3 hours for a 2 pound beet and one and a half hours for a one pound beet. remove from the oven and set aside to rest for 30 minutes.
Unwrap and push the skin and stems off with your thumb. Eat naked (the beet is naked) or use for any recipe that requires cooked beets.
