Ingredients

6 medium size potaoes ( all kinds)

1/2 cup vegetable oil

1/4 cup cider vinegar

1 medium onion - chopped ( red onion)

2 1/2 tsp salt

3 Tb pepper

3/4 cup mayo

1/4 cup 1/2 and 1/2

3 hard boiled eggs - peeled and diced

1 cup dices celery

1/4 cup sliced stuffed green olives

Preparation

cook potatoes until tender ( 20 minutes in jackets) in salted boiling water drain, peel, slice or dice while potatoes are cooking combine oil, vinegar, salt, pepper, in a jar with a lid - shake and pour over warm potatoes. cover well and chill for 3 hours

just before serving - mix mayo and cream and pour over potatoes - toss and add celery, eggs , olives, fresh parsley
