Ingredients
3 cups buttermilk
1/2 cup vegetable oil
2 large eggs
2 cups flour
2 cups coarse stone-ground cornmeal (yellow or white)
1 cup sugar
2 tablespoons baking powder
2 teaspoons baking soda
2 teaspoons salt
Preparation
- Heat oven to 325 degrees.
- Butter a 9-by-13-inch baking pan.
- Combine buttermilk, oil and eggs in a bowl and whisk to combine well.
- In a large bowl, stir together flour, cornmeal, sugar, baking powder, baking soda and salt.
- Pour the liquid ingredients into the dry ingredients and whisk together until combined.
- Pour the batter into the prepared pan and place on the middle rack in the oven.
- Bake for 45 minutes, or up to 1 hour, until the top is golden brown and a toothpick comes out clean when inserted into the middle.
