Ingredients
75g Salted Butter
200ml Semi-Skimmed Milk
1 Large Egg
250g Self Raising Flour
75g Caster Sugar
3 Teaspoons Baking Powder
30g Porridge Oats (e.g. one microwave porridge sachet)
250g Sultanas
Preparation
Melt the butter and set aside to cool a little. Preheat the oven to 200C. In a large bowl mix the dry ingredients (flour, sugar, baking powder, oats, sultanas). In a jug whisk together the wet ingredients (butter,milk,egg). Combine the wet and dry to make a batter, stirring enough to ensure all the flour is incorporated but no more. (It is meant to look lumpy and horrible.) Spoon into a silicone 6-muffin tray. Bake for 20 minutes. Remove from oven and allow to cool on a wire rack.
