Ingredients
Salad:
2 cucumbers, peeled and diced into approx. 1/2" cubes
2 cups grape cherry tomatoes, halved
1 cup feta cheese, crumbled
2 cans (31 oz.) chickpeas, drained and rinsed
1 cup olives (pittled), chopped
1 cup Italian parsley leaves, chopped
2 hearts of romaine, cut-up
Dressing:
1 small red onion, thinly sliced
4 Tbl fresh lemon juice
4 Tbl olive oil
1/2 tsp salt
1/2 tsp pepper
Preparation
Combine salad dressing items and let sit for at least 5 minutes. In a large bowl, combine salad ingredients. Just before serving, toss with dressing, to taste. Season with salt and pepper to taste.
