Ingredients
2 1/2 tablespoons of margarine
3/4 cup of sugar
lemon zest
1 tablespoon of vanilla
a pinch of cinnamon
2 1/4 cups of flour
2 eggs
2 teaspoons baking powder
a pinch of salt
Preparation
- Preheat oven to 375 degrees.
- Cream together butter and sugar until the sugar is mostly blended with the butter.
- Next add in the eggs one at a time, the mixture should look more like cake batter. Then add vanilla extract.
- In a separate bowl mix together, the flour, baking powder, cinnamon, salt, and lemon zest.
- Add the dry mixture to the better a little at a time. the batter should start to get really sticky and thick.
- Take a baking sheet and cover it with butter, and then place flour over top. spread it around like glitter in kindergarten art class then turn it upside-down and shake off the extra flour.
- Put flour on your hands so you can handle the dough(even then it will still be a little sticky)and place it on the baking sheet in a log like formation.
- Bake about 30 minutes, or until the biscotti is cracked and golden brown. it will be cracked before its golden brown, so wait for the golden brown part the most.
- Once out and cooled, cut them into 1/2 inch slices, and eat them with java chip ice cream.
