Ingredients
3 1/4 cups flour
3/4 cups sugar
1 1/2 tsp baking powder
pinch salt
2 eggs
1 egg yolk
1 egg white
1 orange (zest and juice)
1 lemon (zest and juice)
4 tbsp olive oil
1/3 cups grilled whole almonds (preferably with skin on)
Preparation
- Preheat oven to 400F
- Combine flour, sugar, baking powder, and salt
- Transfer to bowl of a stand mixer. Add eggs, yolk, citrus juice, and oil. Mix well
- Add zests and almonds
- Transfer dough onto a slightly floured work surfuce and knead for a few minutes with palm of the hand pushing downward. Do not over knead. Shape into 3 even rolls
- Lay rolls on a baking sheet lined with parchment paper, leaving a space between each (they will spread a little while they bake). Glaze with egg white and sugar or you can use egg yolk
- Bake foe 20-25 minutes
- Remove from oven and let cool. Slice diagonally, 1/2 in. thick. Return to baking sheet and put into 350F oven for 5 minutes on each side.
- Remove from oven, let cool
