Ingredients
2 C brown rice flour
2 C sorghum flour
1 C amaranth flour
1 C Tapioca starch
1/4 C honey
1 t xanthan gum
1/4 C baking powder
1 t baking soda
2 t salt
2 C shortening
1/4 liquid (milk, juice, etc)
various dry additions (poppy seeds, orange zest,chopped nuts, dried fruit)
Preparation
- Combine rice, sorghum and amaranth flour, tapioca starch, Xanthan gum, baking powder, baking soda and salt.
- Cut in shortening and honey until mixture resemble coarse crumbs about the size of small peas.
- Immediately divide into 8 equal portions (about 1 1/4 C each) and seal tightly in plastic. BAKING:
- Before baking, stir in 1/4 C liquid of choice (different flavors, etc)
- Drop onto prepared baking sheets.
- Bake in oven preheated to 400 degrees, for 13-15 minutes, or until tops are golden.
