Ingredients

1 eng. cucumber

4 cherry tomatoes

1/4 red onion chopped (optional)

6-8 black calamata olives pitted and chopped

3 tbs fetta cheese

3 fresh basil leave

3 tbs balsamic vinegar

salt & pepper (to taste)

1/8 c olive oil

Preparation

  • cut cucumber into 1" discs
  • remove inside with a melon baller, leaving a thin base (ends up looking like a mini bowl)
  • set cucumber bowls aside
  • chop tomatoes, olives, onion, feta & basil
  • combine all in a bowl and add olive oil, vinegar, s&p.
  • spoon tomato filling into cucumber bowls
