Ingredients
14 oz chopped, bittersweet chocolate
8 oz unsalted butter
8 eggs separated
14 oz sugar
4 oz brandy
4 oz all purpose flour
Preparation
Pre-heat oven to 350 degrees. Butter and flour a 9x13 pan. Melt chocolate and butter together over a double boiler. Remove from heat. Add half the sugar, brandy and sifted flour. Mix until incorporated. Whisk in egg yolks. In a stand mixer, beat egg whites until frothy. Add remaining sugar and whip until medium stiff peaks. Fold egg whites gently into chocolate mixture and put cake into pan. Bake at 350 degrees fro 40-45 minuts until a toothpick comes out clean. Cool. Cut into triangles, overlap 2 pieces on a plate, ladle brandied cherries over cake, top with shaved white chocolate.
