Ingredients
5 oz water
7 oz granulated sugar
4 oz corn syrup
1 oz cocoa powder, extra brut
1/2 tsp salt
4 oz unsalted butter
2 oz bittersweet chocolate, chopped
2 oz unsweetened chocolate, chopped
1 Tbs vanilla extract
Preparation
In a large saucepan, combine al ingredients except chocolates and vanilla. Bring mixture to a simmer and add chocolates. Whisk until well combined and cook to 104 degrees F. Cool slightly and stir in vanilla extract. Use immediately or cool and store in refrigerator.
