Ingredients
1 cup black beans
1Tbs. olive oil
large red/yellow or orange pepper, diced
1 pint package of mushrooms, sliced
1 large onion, diced
1/4 cups rice
4 cups water
2-3 cups grated Monteray Jack cheese, set aside.
Preparation
- Soak beans, then cook according to package instructions.
- Sautee pepper, mushrooms and onion in 1 olive oil
- Cook rice in water. Allow to sit for 30 minutes.
- Stir in the pepper, mushroom, and onion mixture.
- Take a large rectangular, or square, baking dish and divide the rice mixture, putting a layer of the rice mixture to cover the bottom of the dish. Spread half of the cooked black beans in the next layer. Then spread 1/3 of the grated cheese over the beans. Repeat with the next layer of rice mixture, then beans, then top with the rest of the cheese. You can add 1/3 to 1/2 cup bread crumbs over the top, if desired.
- Cook for 30 minutes or until thoroughly heated and cheese is golden. Serve hot and enjoy!! goes nicely with grilled smoked sausage
