Ingredients

1 can Black Beans

1 can Yellow Corn

1 can White Corn

1 Red Bell Pepper, chopped

3 Roma Tomatoes, seeded and chopped

3 Scallions, white and green parts chopped

1 cup Sugar

3/4 cup Vinegar

1/3 cup Vegetable Oil

Preparation

In a medium saucepan bring sugar, oil and vinegar to a boil. Remove from heat and cool. Drain and rinse corn and beans. Mix all ingredients and refrigerate for at least 5 hours.
