Ingredients
1/2 cup cooked or canned black beans
1/2 cup roasted whole corn kernels
2 Tbsp finely diced red onion
1/2 Tbsp finely diced jalapeno pepper, or to taste
2 Tbsp fresh lime juice
2 Tbsp shredded fresh basil
2 Tbsp olive oil
salt and freshly ground pepper to taste
Preparation
Combine all ingredients and season to taste with salt and pepper. May be prepared as much as a day in advance, covered and refrigerated. Bring to room temperature before serving.
