Ingredients
Marinade
1.5 lbs Spare Ribs, cut into pieces
¾ cup Oyster Sauce
½ cup Sherry
1 tsp Hot Sauce
2 tsp white sugar
Dash white pepper
Dash Fresh ground black pepper
Other Ingredients
2 tbsp Olive Oil
3 cloves finely chopped fresh garlic
1½ tbsp Lee Kum Kee Black Bean Garlic Sauce (available in most grocery stores under Chinese Food)
1 cup water
Preparation
Combine ingredients for Marinade, before marinating ribs overnight in an airtight container, in the refrigerator
Using a deep wok or sauce pan with a cover, Brown garlic in Olive oil at medium heat.
Add Black Bean Garlic sauce and fry for half a minute
Add ribs to the pan; toss to make sure everything is coated in the black bean sauce and olive oil
Add water
Cover and let the mixture braise for forty minutes before serving, stirring every once in a while.
