Ingredients

1 1/2 c canned black beans

1 c. cooked rice

3/4 c. fresh cilantro, minced

1/8 c lime juice

3/8 c. oil

1/4 c. chopped onions

1 clove garlic

1/2 tsp salt

fresh ground black pepper

Preparation

Mix the beans, rice, and cilantro together in a bowl. Place the lime juice in a small bowl and whisk in the oil. Add the onion and garlic and toss with the rice and beans. Add salt and pepper to taste.
