Ingredients
1 cup brown rice
1/4 teasp tumeric
1 can (15oz) black beans
1 cup grape tomatoes (quartered)
1 medium avacado (diced)
1 finely chopped poblano pepper
1/2 cup mozzarella cheese
1/4 cup lime juice
3 Tblsp cilantro
1/2 teasp salt
Preparation
Cook rice according to pkg directions but w/o salt & fat spead thin layer on baking sheet until cool combine remaining ingredients in medium bowl add cooled rice toss gently serve w/favorite greens
