Ingredients
1 c black beans, rinsed and drained
2 Tbsp light olive oil
1/2 c thawed and squeezed dry frozen spinach
1/4 c applesauce
2 eggs
1 egg yolk
3/4 c sugar
3 Tbsp unsweetened cocoa
1 1/2 Tbsp instant espresso powder
3 oz chopped bittersweet chocolate
2 Tbsp unsalted butter
2 tsp vanilla extract
1/2 tsp salt
1/2 c flour
1/2 c mini chocolate chips
1/3 c pecans
Preparation
- Preheat oven to 350*F
- combine black beans, olive oil, spinach, applesauce, eggs, yolk, sugar, cocoa, and espresso powder in a food processor. Pulse 1 minute until smooth. 3.Microwave bittersweet chocolateand butter in a glass bowl, stirring every 30 seconds.
- Cool for 5 minutes.
- Add chocolate, vanilla, and salt to food processor, blend. transfer to bowl.
- stir in flour, mini chocolate chips.
- pour mixture into an oiled 9X13 pan
- top with pecans
- bake 25-30 minutes, cool 15 minutes.
