Ingredients
1 green bell pepper- diced
1 1/2 cups veggie broth
3 chopped garlic cloves
2 cans black beans- drained
18 oz can tomato sauce
1 can diced tomatoes- don’t drain
2 tablespoons ground cumin
2 tablespoons red chili pepper
2 tablespoons dried oregano
1 cup corn kernels (fresh or frozen)
1/4 cup fresh chopped cilantro
salt and pepper
Preparation
Heat broth, saute pepper in broth for 5 minutes- add spices Add the rest of the ingredients except the cilantro and corn- simmer for 20 minutes uncovered Add corn and cilantro- cook covered for 5 minutes
