Ingredients
4-5 cooked ears of corn
1 c. of black beans drained
2 T. of chopped red pepper
2 chopped green onions
1/4 c. chopped cilantro
1/4 - 1/2 t. of cumin
Garlic Salt, black pepper to taste
3 T. Balsamic vinigar or red wine vinigar
2-3 T. olive oil
Preparation
Cut off the corn from the cob. Mix with the remaining ingredients. Toss with the vinigar and oil. Serve
