Ingredients

1/2 bag frozen corn

1 can black beans , rinsed

1 diced red pepper

1 diced tomato

1/2 diced red or sweet onion

1/2 c. finely chopped cilantro

1/2 c. Paul Newmans balsmic vingette

1/4 c. lime juice

Preparation

mix all ingredients. Let stand in refrigerator for a couple hours before serving.

serve with Tostito scoops, or on crostini with shredded parm.
