Ingredients

4 cups veg broth

1 can 14.5 oz can petite Diced tomatoes

1 tbs oil

1 onion diced

1 pepper diced

1 jalopeno (optional)

3 tbs chili powder (mix in some ancho chile)

1 tsp each cumin and oregano

2 cans drained Black Beans

2 cans drained hominy

3 large garlic cloves

1 oz bittersweet chocolate

1/4 cup chopped fresh cilantro

Preparation

In dutch oven: Add onions and peppers to oil, suate unitl soft and golden brown (5 minutes). Add spices, saute till fragrant. Add beans and hominy along with tomatoes and broth.Bring to simmer, reduce heat to low and simmer partially covered until vegetables are tender and flavors have blended. (20 minutes) Stir in garlic, chocolate and cilantro, simmer for a couple of minutes to blend flavors. Turn off heat, let stand for a few minutes. Add seasonings (salt and pepper) to taste.
