Ingredients
1 can Black Beans
1/2 C corn
1/4 cup red onion
1/2 C Tomatos chopped
1 mango
2 Tb Cilantro fresh
2 Tb olive oil
1 small lime juiced
1 tesp Cumin powder
1/2 tesp Garlic fresh minced
Preparation
Rinse and drain black beans, put in a bowl. Chop tomatos and Mango.(You can use fresh or canned. I prefer fresh) The corn you can use frozen thawed or rost a bit in a pan with a few drops of olive oil. The Cilantro just take some fresh and chop, add to the salad. Adjust according to your taste. the dressing: In a small bowl add the rest of the ingrediants and stir well. Pour over salad and toss well. put in refridge for about 1 hr before serving. Serve with grilled chicken or meat of your choice
