Ingredients

1 16 oz can black beans

2 2 cups cooked pasta

3 1 red bell pepper chopped

4 2 tbs red wine vinegar

5 2 tbs chili powder

6 3 tbs fresh chopped cilantro

7 2 tbs cumin

8 pinch red pepper to taste

9 2/3 cup olive oil

10 3 scallions sliced thin

11 1 medium onion chopped

12 2 large tomatoes chopped

1 head leaf lettuce clean and dry

toss together beans, pasta, onion, red pepper and tomatoes. Beat together vinegar, spices, oil and cilantro. Pour over pasta and vegetables and mix well. Chill.

Serve in bowl/platter lined with lettuce. Garnish with scallions
