Ingredients

4 cups cooked black beans, drained and rinsed

2 cups cooked corn kernels (can use frozen)

1 large red bell pepper, finely chopped

2 large garlic cloves, minced

2 jalapeno peppers, seeded and finely minced (optional)

1/2 bunch scallions, minced

1/4 cup chopped cilantro

2 limes, juiced

1/2 cup extra virgin olive oil

salt and pepper to taste

Preparation

Combine the first 9 ingredients and stir to mix well. Season with salt, pepper and cilantro to taste Chill
