Ingredients

3 cans black beans

1 can white shoe peg corn

1/4 c chopped green onions

1/2 c chopped green bell peppers

1 can diced tomatoes - DelMonte Fresh Cut the best

1 clove chopped garlic

1/4 cup oil - olive best

1/3 c red wine vinegar

1 T cajun seasonings

tobasco sauce optional - I do not

Preparation

Drain and rinse black beans and corn together. Place in large bowl. Add green onion, bell pepper, tomatoes, and garlic cloves.

Mix oil, vinegar, cajun seasoning in jar - shake well to mix. Pour over bean and corn mixture. Refrigerate for several hours before serving
