Ingredients

2 15oz. cans black beans rinsed

1 17oz. can corn

2 tomatoes, chopped

1 orange pepper chopped

1 avocado peeled & chopped

1/2 purple onion, chopped

1/8 cup cilantro chopped

4 Tblsp. lime juice

2 Tblsp. olive oil

1 Tblsp. red wine vinegar

1 tsp salt

1/2 tsp pepper

1/2 tsp cumin

Preparation

Place veggies in bowl. Whisk together 2nd group of ingredients and pour over veggies. Store in fridge, mixing occasionally for at least 3 hrs.
