Ingredients

1/2 cup onion, chopped

2 cloves garlic, minced

15 ounce can black beans, drained and rinsed

1 cup frozen corn, thawed

8 cherry tomatoes, quartered

1/2 cup red pepper, diced

2 tablespoons pumpkin seeds, coarsely chopped

1/4 cup fresh cilantro, chopped

2 tablespoons extra-virgin olive oil

2 tablespoons fresh lemon juice

salt and pepper to taste

Preparation

Mince onions and garlic and let sit for a least 5 minutes to bring out their health-promoting benefits.

Mix all the ingredients together and serve.
