Ingredients

2 cans black beans, rinsed

20 ounce frozen corn

1/2 bunch cilantro, chopped

3 limes juiced

3 large, chopped tomatoes

1 green pepper, chopped

1 red or orange pepper (optional)

1 bunch green onions, chopped

Avocados, sliced into small pieces (optional)

1 cup olive oil

Preparation

Combine all ingredients into a bowl except for the lime juice and olive oil. Combine lime juice 1 cup olive oil, salt and pepper (to taste). Drizzle over salad. For an alternate dressing, try feta cheese with olive oil.
