Ingredients

Salad:

1 cup sliced red or green cabbage

3/4 cup vertically sliced red or white onion

2 (15 oz) cans of black beans rinsed and drained.

1 fresh tomato

Dressing:

1/4 cup fresh lime juice

1 tablespoon sugar

1 tablespoon olive oil

1/4 teaspoon ground cumin

zest from 1 lime

Preparation

Salad: combine cabbage, onion, black beans, tomato in bowl, toss well.

Dressing: combine lime juice, lime zest, sugar, oil, cumin in small bowl, whisk till blended. Pour over bean mixture, toss to coat.

garnish with lime slices.
