Ingredients

15 oz can black beans (low salt or similar from dried black beans)

1 medium Cucumber, peeled, seeded and chopped

1 medium tomato, seeded and chopped OR 1 pt of cherry tomatoes, halved.

1/2 C green onion

1/4 fresh lime juice (1 lime)

1 tbl chopped fresh cilantro

1 tbl olive oil

1/2 tsp salt

1/2 tsp cumin

1/8 tsp red pepper

Preparation

Combine all ingredients cover and refrigerate for several hours Serve with chips, pork, chicken salmon, etc.
