Ingredients

2 cans black beans rinsed

2 cans corn rinsed

3 bell peppers (different colors), diced

1 tblsp onion, chopped fine

2 garlic cloves, minced

1/2 tsp cumin

1/2 cup olive oil

1 cup balsamic vinegar

Preparation

Mix all ingredients and serve with “scoops” Better after sitting for a few hours in the refrigerator.
