Ingredients

1 onion, diced

4 ribs celery, sliced thin

1 Yukon gold potato, diced

1 1/2 cup chicken broth

15 ounce can black beans, rinsed and drained

1/4 teaspoon cayenne

1/4 teaspoon cumin

1/2 teaspoon sea salt

optional ingredients:

2 carrots, diced

2 ounces bacon, blanched OR

1 lemon, juiced

Preparation

  1. Add all ingredients to a heavy bottomed pot.
  2. Cover and simmer over medium low heat.
  3. Stir occasionally until potatoes are tender, approximately 30 minutes.
