Ingredients
2 tablespoons vegetable oil
2 cloves garlic
1 onicn chopped
1 carrot chopped
1 celery stalk chapped
1/2 teaspoon thyme, oregano & cumin
1 bay leaf
1/2 teaspoon salt & pepper
3 cups chicken or vegetable stock
2 - 19 ounce cans black beans, drained
1 - 14 ounce can tomato sauce
hot pepper sause (dash)
2 teaspoons lime juice (fresh is best)
3 teaspoons brown sugar
Preparation
Brown chopped vegetables in oil. Add spices to vegetables and stir for 2 minutes. Add stock to vegetables,and simmer for about 20 minutes. Add beans and rest of ingredients to pot. Put about half to two-thirds of the sou throgh the blender, then combine with balance of soup. Can be made ahead and reheated, and is very nice served with a dollop of sour cream.
