Ingredients

3 T olive oil

8 6" corn or other tortillas

2 C cooked or canned black beans drained

1 T minced garlic

1 T Chili Powder

1/2 t ground cumin

1 t salt

Black pepper to taste

1 chopped red bell pepper

1 green chili

1/4 C chopped scallions

juice of two limes

1/2 C chipped fresh cilantro

Preparation

  1. Heal oven to 400. Coat rimmed baking dish with oil stack tortillas and wrap in foil 2 combine beans garlic, chili powder, cumin, half the salt and some pepper in bowl, mash
  2. spread bean mixture in prepared pan, drizzle with oil and roast. Stirring occasionally bake 15 - 20 minutes. Move tortillas in for last 5 minutes
  3. Meanwhile put the cabbage bell pepper, chile, scallions, lime juice, cilantro, and pepper, toss to combine.
