Ingredients
3 T olive oil
8 6" corn or other tortillas
2 C cooked or canned black beans drained
1 T minced garlic
1 T Chili Powder
1/2 t ground cumin
1 t salt
Black pepper to taste
1 chopped red bell pepper
1 green chili
1/4 C chopped scallions
juice of two limes
1/2 C chipped fresh cilantro
Preparation
- Heal oven to 400. Coat rimmed baking dish with oil stack tortillas and wrap in foil 2 combine beans garlic, chili powder, cumin, half the salt and some pepper in bowl, mash
- spread bean mixture in prepared pan, drizzle with oil and roast. Stirring occasionally bake 15 - 20 minutes. Move tortillas in for last 5 minutes
- Meanwhile put the cabbage bell pepper, chile, scallions, lime juice, cilantro, and pepper, toss to combine.
