Black Bean Thai-Cos
4 servings
8 Corn Tortillas
Cooking Spray
(2) 12" pieces aluminum foil - 3 sides folded together to make a pouch
1 14.5 can black beans - drained
4 T Thai Peanut Satay Sauce (I like Trader Joe’s Peanut Satay Sauce)
1 t fresh lime juice
2 t chili garlic sauce
1 avocado peeled and diced
2 green onions diced
4 T crumbled goat cheese
1/4 chopped cilantro
Preparation
To prepare tortillas: Preheat oven to Broil. Set rack to 2nd level from top.
Lay out tortillas on cookie sheet. Lightly spray with cooking spray. Cook for 1 minute. Turn tortillas and spray again. Cook additional minute. Take out of oven and put tortillas in pouch. Turn off oven. Seal pouch and put in oven to keep warm.
Mix beans, peanut sauce, lime juice and chili garlic sauce in bowl. Mix well. Microwave on high for 2 minutes or until heated through.
Take tortillas from pouch and place on 4 plates.
Divide bean mixture (approx 1/4 cup beans) in each tortilla. Top equally with cheese, avocado, cilantro and green onions.
