Ingredients
3 Tablespoons olive oil
1 medium onion, chopped
4 large garlic cloves, minced
1/8 teaspoon cayenne pepper
1 teaspoon cumin
3/4 teaspoon ground coriander
1 teaspoon basil
1/4 teaspoon oregano
1 can black beans
1 14 oz can diced tomatoes
1 large can hominy
Preparation
Heat oil in a large skillet. Add everything except the beans, tomatoes and hominy. Saute until onions are soft, about five minutes. Add remaining ingredients and heat until bubbly. Serve with sour cream and shredded cheese.
