Ingredients
black eye peas - 180g soaked o’nite in 1 litre water & 1/4t baking soda
salt 2t
vegetable oil 3T
asafeitda - generous pinch
cumin seeds 1/2t
onion 1.5 med - chopped
tumeric 1/4t
ground coriander 1t
ground cumin 1t
tomato sauce 1 cup
cayenne pepper 1/2t
tamarind paste 3T or 2T lemon juice
Preparation
After soaking, add another 500 ml water and 1t salt. Boil, skim and simmer for 5 minutes. Drain and discard liquid
heat the oil,, when hot put in the astefida and cumin seeds. Add chopped onion, fry for 7-8 minutes until lightly browned
Add the tumeric, coriander and cumin and cook for one minutes
Put in tomato sauce and simmer for 5 minutes on low heat.
Add the black eye peas, 150 ml water, the rest of the salt, the cayenne and tamarind paste. Bring to the boil. Cover, lower heat and simmer gently for 30 minutes.
