Ingredients
3 cups back eyed peas
3 T basalmic vinegar
1/2 t tabasco sauce
1/4 c oive oil
1/2 c beef consomme, undiluted
1/2 large red onion, diced
3 stalks celery, diced fine
1/2 bunch fresh parsley, chopped
2 cloves garlic, minced
Preparation
Soak beans overnight and cook in salated water till tender (20-30 minutes) Drain & rinse. Put in large bowl and add the rest of the ingredients. Add salt & fresh ground pepper to taste.
