Ingredients

1 cup raw rice cooked according to package directions

1 cup black olives (can use Greek olives or canned black olives) - sliced

1 can tuna drained

1 large or 2 medium tomatoes (can peel if desired)- diced

1 cup garlic vinagrette dressing made with 1 cup olive oil, 1/2 cup red wine vinegar, 1 clove garlic crushed or mashed, 1/2 tsp. salt, 1-2 tsp herb de provence

Preparation

Make the vinagrette while the rice is cooking. Toss all ingredients together while the rice is still warm so that it absorbs all the flavors, add 1 cup of the vinagrette, may add more or less as desired. Can be served either warm or chilled on a bed of salad greens.
