Ingredients

four cups black berries

four cups water

orange juice concentrate

5 cups sugar

1/4 tsp salt

cinnamon stick

Preparation

Mash blackberries, making sure to crush well. Do NOT puree or blend. Place in large stockpot add water. Simmer until reduced by half, stirring occassionally. Remove from heat, seive seeds out of blackberry stock until you have a seedless “broth”. Pour back into clean stock pot and simmer again, adding sugar salt, cinnamon stick and orange juice concentrate. Reduce until thickened being careful to stir regularly so as not to burn.
