1 quart boiling water

1/4 cup sugar, (optional)

1 pound green beans, trimmed

2 tablespoons olive oil

2 tablespoons bacon, fried, crumbled

1/8 teaspoon pepper

TO COOK: Add water in a heavy sauce pan, bring to a boil and add sugar. Stir until just melted. Add green beans; cover pan. Boil hard for 6 minutes; drain. Plunge beans into ice water to stop cooking process and drain again.

In a skillet heat olive oil and add beans. Cook just until heated, about 2 minutes. Add bacon; stir well. Remove from heat; season with black pepper. Serve hot.
