Ingredients

Salad:

1 Bag Baby Spring Mix

1/2 cup Sliced Almonds

1/2 cup dried cranberries

1 cup Bleu Cheese (preferably crumbled danish)

1 Red Onion (sliced thinly)

Dressing:

4 oz seedless raspberry preserves

1 oz Red Wine Vinegar

4 oz Extra Virgin Olive Oil

1/4 t dried basil

1/4 t dried oregano

1/4 t dried thyme

To Taste: Kosher salt & Black pepper

Garnish:

Black & White toasted sesame seeds

Preparation

Mix together in a bowl Bleu cheese, cranberries, almonds and sliced onions. Reserve for 10 minutes.

In a seperate bowl whisk together all ingredients for dressing. Whisk until emulsified & Thick. (Add more olive oil if too thick)

Combine spring mix with reserved Bleu mixture, and toss lightly with dressing. Platter, and garnish lightly with sesame seeds.
