Ingredients
1 c red onion
3 tbsp sherry vinegar
2 lbs. cherry tomatoes
1 C chopped celery hearts
1/2 cup brined green olives, + 2 tbsp olive brine
2 tbsp horseradish
1 tbsp worcestershire
1 tea hot pepper sauce
1/2 tea celery seeds
1/4 c olive oil
salt/pepper
Preparation
Mix onion and 1 tbsp vinegar. Let stand 10 minutes. Add tomatoes, celery and olives. Whisk remaining 2 tbsp vinegar, olive brine, horseradish and next 3 ingredients. Slowly whisk in oil. Add to bowl with tomato mixture. Season with salt/pepper.
