Ingredients

4 large sweet potatoes (about 2 1/2 lbs. peeled and sliced paper thin)

1 can evaporated milk

1 cup milk (not skim)

3 cloves finely minced garlic

1/2 teaspoon salt

1 jalapeno pepper minced

1/4 teaspoon pepper

1/8 teaspoon ground nutmeg

8 ozs. crumbled blue cheese

Preparation

Preheat oven to 350° F. Sautee garlic and pepper with a little olive oil. Add milk, salt, pepper, nutmeg potatoes and the blue cheese in a large saucepan. Simmer 5 - 7 min, stirring occasionally. Spoon into 8 by 8 by 2 inch baking dish.

Bake in 350° F. oven 35-40 minutes, until potatoes are fork-tender and top is brown.

Top with bread crumbs if desired.
