Ingredients

2-1/4 cups flour

1 cup plus 2 Tbsp cornmeal

1/4 cup sugar

4-1/2 tsps baking powder

3 eggs

5 Tbsp butter, melted

1-1/2 cups buttermilk

1 cup blueberries

Preparation

Grease twenty-four 2-1/2-inch muffin cups or line with paper bake cups. Combine all dry ingredients in large mixing bowl. In small bowl, combine eggs, butter, and buttermilk. Stir egg mixture into try ingredients gently until just mixed. Gently fold in blueberries. Fill muffin cups 1/4 full. Bake in a 375 degree oven for 25-30 minutes or until golden and firm.
