Ingredients

3/4 C cornmeal

1/2 C whole wheat pastry flour

3/4 C unbleached white flour

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 eggs

2 C milk (or mix of milk/soymilk)

1 C blueberries (fresh or frozen)

Preparation

Mix dry. In separate med. bowl, beat eggs. Add milk & oil. Mix into dry, stir to moisten, add blues & mix gently. Heat griddle, light oil. Cook pancakes.
