Ingredients
4 c. blueberries (fresh)
1/2 c. sugar
2 tbsp. cornstarch
2 tbsp. lemon juice
1/2 c. rolled oats
1/2 c. flour
1/2 c. packed brown sugar
2 tbsp. chopped toasted walnuts
6 tbsp. light margarine or butter
Preparation
- Preheat oven to 375. Coat a 1 qrt casserole w/cooking spray.
- In a large bowl, mix the blueberries, sugar, cornstarch, and lemon juice. Spoon into the casserole
- In the same bowl, mix the oats, flour, borwn sugar, and walnuts. With a fork or pastry blender, cut in the margarine or butter until the mixture resembles cornmeal. Sprinkle over the berry mixture.
- Bake for 45 minutes, or until lightly frowned and ubbbling.
