Ingredients
Pancakes
2 cup milk
2 eggs
2 tsp vegetable oil
1/3 cup ricotta cheese
zest of 1 fresh lemon
2 tsp lemon juice
1/3 cup white sugar
2 cup flour
2 tsp. baking powder
pinch of salt
1 cup blueberries
Maple-Butter Sauce
1 cup Maple Syrup
½ cup butter
Wisk butter and syrup together over low heat until melted
Preparation
Combine wet ingredients in a large bowl. Combine dry ingredients in a smaller bowl before adding to wet ingredients. Gently stir in blueberries. Drop batter by ¼ measures onto a hot griddle and cook until deeply golden on both sides. Serve with Maple-Butter Sauce
